It all began with a box of “River Rice!” The orangish/yellowish box of rice was the popular brand in the 70’s, not sure when it was created though, but my parents kept it on the shelf! It became a new realization for me that I loved reading labels or discovering recipes on the back of cans of Campbell soup and other food packaging. My first dish came from the back of the River Rice box. It was a “Frito Casserole!” It came out more delicious than I thought it would, but will my family love it? The answer was yes! I continued to try out recipes from my mommy’s collection of cookbooks every week and later in life, started my own cookbook collection. I have cooked for school breakfast meetings, civic clubs, churches, and more. Out of all the many memorable occasions that I have experienced as a personal chef, the one that stands out the most is when a child came up to me and asked me, “Excuse me, can you make me some greens for Christmas?” My response was, “Of course, I will, let me go speak to your mommy.” That was when I knew that I was destined to put a smile on the world’s tummy! The Unforgettable Gourmet was established in the year two-thousand twenty.
